Yes, it's actually trivial to do so. Enfold Desktop just uses the
workflow states defined on the Workflow in Plone. If you change the
Workflow in Plone by adding or removing states, or even switching to
an entirely different workflow, it will reflect immediately in Enfold
Desktop.
